Homemade Southern Meals



Crock Pot Beef Stew and Cornbread


Use a large crock pot and add the following ingredients for Beef Stew:


8 lb bone- in chuck roast (bone- in gives better flavor)

3 stalks of celery and leaves (clean)

1 bag of baby carrots (clean)

3 peeled and chopped parsnips

1 small bag of new potatoes, cleaned and cut in half

1 carton of G-free Pacific National Beef Broth

3 bags leaves (remove before serving)

½ teaspoon of Thyme

1 tablespoon of fresh cracked black pepper

½ cup of Amy’s G-free ketchup

1 box or bag of frozen sweet peas (add the peas 45 minutes before cooking cycle ends)

Add all the ingredients to your crock pot except the peas. It usually is filled to about 1 inch below the top fill line. Cook on low for 7 hours or until meat comes off bone and veggies are done. Add the peas about 45 minutes before the cooking cycle ends. This is a complete meal in itself. You may want to add a green salad or fruit salad.

We usually have my “50” year old cornbread with this meal. This cornbread is not gluten free but you can buy gluten free cornbread from “Whole Food” to make this meal completely g-free.

My “50” year old cornbread recipes contains.




1 cup of “Red Mill” medium grind cornmeal (plain)

1 cup all purpose flour

1/3 cup of sugar

4 teaspoons of baking powder

1 teaspoon of kosher salt

1 egg (beaten)

1 cup regular milk

Mix the above ingredients wet to dry. I use a 9”x9” glass cooking pan. Pour 1/3 cup of vegetable oil into a measuring cup. Coat the bottom of the pan with ¼ of the oil and add the remainder to your cornbread mixture. Bake at 375 F for about 40-45 minutes until top is medium brown. Remove from oven and cover top with unsalted butter slices, when melted spread over entire cornbread top. Cover with aluminum foil and let set for at least 15 minutes before serving. It will usually make 9 good size pieces to serve. This cornbread is delicious by itself or add fresh honey to the top. If you like the mix, next time add cut fresh sweet corn to the mixture or grated cheese for a change of taste. My husband loves to take the cornbread and crumbled several pieces in a large glass and add sweet milk for a snack!
